Weekly Meal Plan — January 15 – 21, 2012

Not working, having 2 fairly young children and budget cuts have totally drained our funds! One way we have tried to save money is by cutting out extra spending. And for us, a major source of extra spending was ordering in, dining out and grocery shopping multiples times per week. To combat this, I started planning our meals monthly. I check the cabinets and freezer towards the end of the month and try to come up with meals from what we have without being too repetitive. It’s harder than it looks!!  Sometimes my meals get REALLY boring and I eat a bowl of cereal instead so if you have suggestions, please let me know.

Sunday: @ my parents’ house
Monday: Sloppy Joes and green beans
(We don’t like buns around here, have you tried using lettuce instead of a bun? How was it?)
Tuesday: Southwest Chicken Bake and _________________
(Any idea for a side? We are having rice Wednesday -that’s what’s suggested with this meal- and green beans Monday)
Wednesday: Chicken and Wild Rice Casserole and broccoli
(I don’t use sage or parsley, we didn’t like the taste of it the first time.)
Thursday: Slow Cooker Balsamic Beef Sandwich and carrots
Friday: Leftovers
Saturday: Taco Soup
(We use chicken instead of beef and don’t usually have a side because everything is in the soup.  I may pair it with apples or whatever fruit we have leftover.)
